Fish and Oyster Mornay
Ingredients
Fish
Oysters
1 pint thick White Sauce
Grated Cheese
Breadcrumbs
Lemon Juice
Butter
Method
Sufficient fish and oysters for numbers of servings.
Steam fish and break into pieces - put alternatively layers of fish and oysters together and white sauce - sprinkling each layer with cheese and a little lemon juice.
Cover top with crumbs, dot with butter.
Bake in moderate oven 1/2 to 3/4 hour.

Main Course - Tuna baked in white sauce with mustard, sugar, vinegar, eggs & capers topped with buttered corn flakes

Main Course - Scallops simmered in white wine then gratineed
