Cod Royale

Ingredients
1/2 lb smoked Cod
1 rasher Bacon
4 small Onions
Juice of one Lemon
4 small Potatoes
4 small Tomatoes
1 hard boiled Egg
Salt And Pepper

Method

Cut four squares of aluminium foil or transparent cooking film about 10 inches by 10 inches. Grease lightly with butter on the shiny side of the foil to within an inch of the edge.

Wash the cod in cold water and soak for 10 minutes. Cut in 1 inch pieces, removing the bones, peel the onions and the potatoes, cut the bacon into four pieces.

Drain the fish and place with the potato, onion and tomato on each piece of foil. Top with a piece of bacon and sprinkle with lemon juice.

Fold the foil to seal the contents, making sure the seams and the ends are facing upwards. Cook in a moderate oven 350 deg. for 40-45 minutes. Serve with the foil rolled back and sprinkled with chopped hard boiled egg.
