Method
Reduce the fish stock well with the tomatoes, celery, onion, garlic, chillies, bay leaves and mixed herbs.
Strain then garnish with small dice of celery and onion. and a lot of flaked fish and seafood.
Flavour with extra chillies, dark rum and a little vinegar.
Remarks
Appeared on an autumn menu (in a folder of menus from 1978-79) although the menu itself is undated: "Bermuda Fish Chowder $2.00"
Also appears on a specials list, sometime in 1978-79, but with a changed name "Spicy Fish Chowder with Rum $2.80"
