Veloute Sauce (see recipe 627)

Method
Finely chop onion and slice mushrooms, cover with white wine, chopped parsley and poach till cooked. strain and reduce cooking liquor. Add Veloute Sauce. Take off stove and add whipped cream and any left over Bearnaise. Season with salt and white pepper.
