2 Egg Yolks
Salt
Pepper
Lemon Juice or Vinegar
1/2 pint Olive Oil
1 Blood Orange
Method
Beat the egg yolks, salt, pepper together with 1 teaspoon of lemon juice or wine vinegar.
Drop by drop, beat in 1/4 pint olive oil; then another 1/4 pint in a steady stream.
Season with more lemon juice or vinegar, and the grated rind and juice of a blood orange.
